Why Don’t We Keep CR Eggs in the Refrigerator?

In Costa Rica, it is commonly known that eggs are not kept in refrigerators. Consequently, unwashed eggs have a longer shelf life without refrigeration since their natural protection remains intact. Additionally, the warm and humid tropical climate of Costa Rica may accelerate condensation on refrigerated eggs, which creates a conducive environment for bacteria growth. Therefore, it is considered unnecessary to refrigerate eggs in this region as they can be safely stored at room temperature until consumed, ensuring freshness while preserving their natural defenses against contamination.
